Things You May Not Know

I kind of stole this idea from Traci over at Mommy Mayhem.  These are some things you may or may not know about me.....

My eyelashes hurt when I'm tired.

I like watching TV shows on gangs and drug lords.

I can drink really strong coffee at night before bed and still sleep like a baby.

When I was 7 or 8 years old I had dumbo ears and had plastic surgery on them to make them lay flat on my head.

Since I had gastric bypass, I LOVE spicy food.

I love tattoos.

I think the words "wood" and "log" are funny.  They make me giggle.

I hate the word "moist".

I make my own laundry detergent.

I'm afraid of heights/ledges.  Please do not make me stand on a retaining wall, even if it's only 3 feet off the ground.  Neither elevators nor roller coasters bother me though.

I like tomatoes.  I like tomato and mayonnaise sandwiches.  I DO NOT like tomato any kind of sandwich with meat, not a ham and cheese or hamburger....gross, but I will eat a BLT.  Are you confused yet?

I order food sometimes like Sally Albright from When Harry Met Sally.  It's ridiculous.

I get along with just about everyone.

I've watch every season of American Idol and when I see Ruben Studdard around town, I chase him down just to walk by him in Publix and get all red faced when I finally walk by him and say "hey, what's up?".

I love 90s grunge music and I love Metallica.

I'm not a very good cook, I rely heavily on other folks recipes.

I sing and dance in the car......by myself.

I love office supplies so if you ever want to get me a gift, a gift card to Staples would be AWESOME!

I never carry cash with me.

I want to learn how to sew.

I cry easily, not because I have gotten my feelings hurt.  I'm sensitive, but in a good way.

I love road trips, anywhere, distance doesn't matter.

I have 75 Pinterest boards, 6,349 Pins and 501 followers.  I love it!

I love silicone band watches in all colors.

I get up at 4:15 every morning during the work week.

I think it's rude not to say "bless you" when someone sneezes. I even say it to strangers.

I don't like TV shows about aliens and Area 51.  They're stupid.

Sometimes it's really hard to believe that I'm really 43 years old.

I love a good movie where the earth is getting destroyed, i.e., Dante's Peak, 2012, The Day After Tomorrow, Twister.

I'm an angry person when I'm tired.  Stay away.

I'm not very organized.

I do not like sand.  I love going to the beach but would rather hang out at the pool.

I can't think of anything else right now.....my brain is tired.

Sweet and Sour Meatballs



WOW!!!  This was so easy!  Mike really liked it, Maggie ate some of it, Sarah had rice and I had 1 1/2 meatballs.  I can't have the rice and I really wasn't very hungry.  I got the recipe at Six Sisters' Stuff.  They have great recipes on their website if you want to check them out.

In the sweet CrockPot iStir I won not too long ago, I just added my meatballs, sweet and sour sauce, soy sauce, a can of drained pineapple chunks, a red bell pepper and a green bell pepper and cooked it on low for 8 hours and served it over rice.

I will make it again.  Hopefully I will be able to enjoy it more next time.

Chicken Cordon Bleu Rollups

Just so you know in advance, I'm not creative when it comes to cooking.  Most of the time I can't even follow directions.  I've been known to mix the wrong ingredients at the wrong time, then I just have to wing it.

I really don't get many complaints from my family and I try to make stuff that at least 2 of the 3 will like. Occasionally I will make something that I know the kids won't eat so I have always have something on standby.

I made these Chicken Cordon Bleu Rollups with a side of green beans.  I knew Maggie would eat the rollups, but not the green beans, she had grapes and baby carrots with hers and Sarah tried it, didn't like it, which I kind of figured, she doesn't like "casserole" type stuff. She had a ham sandwich with slices of cheese, grapes and baby carrots on the side.

I thought they turned out really good. I may cook them for 5-10 more minutes next time.  I had some left over meat mixture (see I don't always follow directions) and I put it in the fridge for a weekend night where I can throw some crescents in the oven stuff with that meaty goodness and some cheese and Maggie will have another meal!



This is a mixture of milk, cream of chicken soup and swiss cheese. I honestly did not know you could buy a block of swiss cheese.  Yep, just goes to show you I really know my way around a kitchen and grocery store!


This is chopped ham and chopped chicken with a little of the above mixture to make sure it sticks.



This is after I stuffed the crescent rolls and I spread a little of the milk/soup/cheese mixture on the bottom of the pan, after I sprayed it and then put down my rollups then poured the rest of the mixture on top.  Popped in the oven at 350 degrees for 30 minutes.


When it came out of the oven!  YUMMY!  I had 1, Mike had 4 and Maggie had 2!  I would say it was a success!

Scallops and Couscous

We bought some patagonian scallops a while back and the kids were begging for them.


I really didn't do anything special.  I cooked them in a skillet with some butter and garlic.


Mike and I love couscous and I can eat it without it blowing up in stomach like rice would, which is a HUGE no no in the weight loss surgery world. I can eat one piece of sushi and be done.  I got some garlic and herb couscous at Aldi and I added some corn, red bell pepper and a jalapeno with no seeds.


The kids won't eat couscous so I made them some macaroni and cheese.  I thought it was a great dinner and everyone was happy.  Except for........


the cutting board which met its demise.  I had it on a corner of the stove I was not using and I turned on the wrong eye and was wondering why my broth wasn't heating up for the couscous.....well, it's because I was trying to cook the cutting board.  Yeah, it melted to the eye.  BUT we do have a glass top stove and once the melted plastic cooled, I was able to scrape it off the stove.  The house stunk.  Good dinner though!

Bubble Pizza

One of the things I've been doing so much better at is planning our meals.  Life has been a little easier since I've been doing this.  We are so bad to going to the grocery store a couple of times a week and spending way more than we intended.  It's ridiculous.  I found this bubble up pizza recipe on Plain Chicken and thought, well my kids like pizza and this has to be way better for them than a pizza from a delivery place!

The kids loved it, the husband loved it and I call that SUCCESS!!!

And it was good left over for lunch the next day too!

My New Favorite Thing

We recently went from a queen size bed to a KING and a pillow top mattress to a memory foam mattress.  All I can say is WOW!!!  New mattress, new sheets, new gigantic pillows and new down comforter.....all I want to do when I get home from work is get in the bed and read!

I did get in the bed the other night at 9:00, read for an hour and then went to sleep.  It was fabulous.

Bathroom Organization

My Mother-In-Law got me a Silhouette Portrait for Christmas in 2012 and I think I've used only 2-3 times. I just never make the time to use it, but have great ideas about what I want to do!

For some reason, the girls' bathroom is the catch all.  Unfortunately, it's also where the washer and dryer are. I am sick of the crap in there, just sick of it.  I saw a great idea on Saving 4 Six and I was inspired.

I got these containers with lids from the Dollar Tree and put their names on there.  Inside the containers are their hairbrushes, toothbrushes (in holders of course), toothpaste, Maggie's deodorant, dental floss, Maggie's contact cases, etc.  I just keep those under the sink that I cleaned out too.  I think this will keep all of this crap off the countertop and I can keep it clean.


The drawers were horrid.  There was all kinds of crap in there. Clippers, bobby pins, hair ties, nail polish, lip gloss, you name it, it was there.  BOTH of them were like that!  I put all make up and nail polish in a small container under the sin, and all of the hairbows, etc in a smaller container under the sink as well.







Now the drawers are all clean and Sarah has already said she liked it not being so messy.  I'm like, honey, it's was all stuff that belonged to you guys and not in it's place.  It didn't take very long to do this and I feel like I accomplished something for once!  I'm ready for more organization and Silhouette projects!

Italian Meatball Pockets

I've been trying out new things for dinner lately and I came across this.  I don't know what it's called, but I called it Italian Meatball Pockets.

I took 2 cans of jumbo biscuits and flattened them out real good.  They were sticking to my cutting board so I added a little flour.


I added a meatball and a pinch of mozzarella cheese and folded it up around the meatball and put in the pan seam side down.



I sprinkled some parmesan cheese on top and cooked them for about 25 minutes on 350.  They turned out really good.  I warmed up some marinara and served it with the meatball pockets.

Truths

Oh lawd, where do I start?

My co-worker (we work for the same attorney) drives me crazy, I seriously want to throat punch her sometimes.  Her chairs makes this gosh awful noise, she blows her nose every day between 2 and 2:30 and she hiccups ALL. THE. TIME.  AND she sleeps.

I would love to homeschool my kids, but I have to work full time.  I thought about unschooling them so they can stay home and keep my house clean and laundry done.

I look at myself in the mirror a lot now.  I'm still getting used to my new self.

I like reading GOMI and seeing what crazy things bloggers are saying and doing.

Craft Organization

My craft area as a huge mess and little folks in my house wouldn't stay out of it.  My mother in law had an old TV armoire that she didn't want anymore and I had this great idea to take the shelving out and use it to store my craft supplies.



Now everything is put away neatly and I can close the doors and hide it when we have company over.

Drink Station

While I was redoing my kitchen, I wanted to have drink station with a little more room.  So I put away one of the coffee pots, the regular one we only use when we have company who wants coffee.  Now it's set up just how I want it and it's working out for everyone.

The Keurig is on a stand that slides out which makes it easy to "put away" since those things are kind of bulky, but take away the Keurig and we'll chop your arms off.

And this is where I keep all of my water flavor packets and sweeteners, etc.  Our favorite coffee cups are on the bottom.  We only keep those white ones because they match our dishes.

I'm just a happy camper with things they way I want them!

DIY Burlap Placemats

As stated in this post about my kitchen, I am making changes in the kitchen.  I'm going with Fiesta Ware colors, some bold and some not.

I saw this idea on Pinterest and thought it was a precious idea.  I ordered some burlap placemats from Amazon and I think they were only $2.50 each, so I ordered 4.  I had some orange acrylic paint and I found a stencil I liked and sat down one night with a TV tray and watched WWE and painted my placemats and they look adorable in  my kitchen with the colors I'm using.
